Castello Bonomi Tenute In Franciacorta

We went to this winery for a visit and tasting. The premise is that both me and my partner don't like sparkling wine. During the visit we understood both why we didn't like sparkling wine and we understood that in the Franciacorta ecosystem itself the definition of dosage zero, extra brut, brut, dry and extra dry is often very labile because there are accepted tolerances. We were pleased to find the Castello Bonomi bubbles exceptional thanks to the use of few sugars (if I remember correctly, maximum 5g/l in their wines) and above all thanks to the extra restriction they impose on themselves compared to the Franciacorta consortium on the use of sugars (in practice they respect the consortium's rules to the letter by not playing with sugar tolerances). In short, it wasn't the first time we went to Franciacorta and with Castello Bonomi we really began to appreciate this excellence. We even purchased a Syrah from Castello Bonomi and discovered that it is mistakenly associated with southern wines. Diego and Max were exceptional and also helped us with the restaurant we had post tasting.
